Niseko is known across Japan for its beautiful, clear spring water and locals travel miles bringing their buckets and containers to collect this famous water for their own use. And why is it so good? It’s all about the journey that can take up to 100 years for the snow melt to filter through Mt Yotei, seep through the ground, then emerge into one of the springs in the region. Yoteizan no Wakimizu is the spring located between Niseko town and Makkari which is the source used in tofu production at Wakimizu no Sato – the popular tofu shop famous for their tofu donuts. Located 20km away this is a Must See and Must Taste destination as they cook up an array of more than a dozen different tofu dishes offering samples so you can try before you buy.
